Ingredients:

2 Medium or 1 Giant Onion
1 lb of Bacon
3 lb+ Chuck Roast
6 Cloves Garlic minced or pressed
1 lb+ Hot or Mild Pork Sausage
2 cans Diced Green Chilies
1 can Tomato Sauce
1 can Rotel Diced Tomatoes and Green Peppers
1/3 cup Vinegar
3 tsp Salt
2 tsp Crushed Red Pepper
3 tsp Cumin
2 tsp Coriander
3 tsp Chili Powder

Note: If you have a roasting pan large enough for all the ingredients listed, you can make all of the chili in the roasting pan. If your roasting pan is not large enough to hold all ingredients then you will have to transfer the roast into a crockpot when it is done cooking in the oven.

1. Preheat your conventional oven to 400 degrees. Place your chuck roast in a large roasting pan. Pour everything listed next evenly on top of the roast in the exact order they are listed. 1/3c vinegar, 1 tsp of salt, 1 tsp of crushed red pepper, 1 tsp of cumin, 1 tsp chili powder, 1 tsp coriander, 1 can diced green chiles, 6 cloves of garlic pressed or minced and 1 giant chopped up onion. Put a lid on the roasting pan and put in the oven at 400 degrees for 1 hour. After one hour is up, turn the oven down to 300 degrees and cook roast for an additional 2 hours.

2. When there is about a half hour left for the roast to cook, start working on the next steps. Chop up the 1lb of bacon and fry it in a pan until crispy. Do not drain the bacon when it’s done cooking.

3. Next you will brown your ground pork sausage. Season the pork sausage with 1 tsp salt, 1 tsp cumin, and 1 tsp chili powder. Cook on medium heat until lightly browned or cooked through.

4. When the roast is done it should just fall apart. Chunk it up or shred it up using a fork and a knife. At this point you can either transfer the roast into a crockpot or add the next ingredients on top of the roast in the roasting pan. Pour the bacon and ground pork in with the roast. Add 1 can diced green chilies, 1 can tomato sauce, and 1 can diced tomatoes and chilies. Mix everything together and add another 1 tsp salt, 1 tsp crushed red pepper, 1 tsp cumin, 1 tsp chili powder, and 1 tsp coriander. Stir everything together really well, cover and put back in the oven at 300 degrees for 45 mins. (If you are using a crockpot for the last steps, cover and cook on high heat for 1 hour.)

Note: If you like your chili with more spice, at step #4 you can add more heat. Diced jalapenos, habaneros, serranos, or your favorite hot pepper.
